"Christmas Mint Candy"

This one's is not a commentary, but a recipe for butter mints that I enjoy making for the holidays and special occasions. May they be a blessing to you.



3 tablespoons softened butter

cup cream or canned milk

teaspoon salt

1 teaspoon vanilla

2 teaspoons peppermint extract

1 pound powdered sugar (perhaps as much as another pound more)

a few drops of food coloring for appearance


Mix the ingredients with your hands until they take on the consistency of soft dough; sometimes I find that I must add up to an additional pound more powdered sugar.

Roll into balls (about an inch wide) and shape by spoonful, then place in rows on wax paper, pressing down and flattening it with a fork.

Dry them on the wax paper for 24 hours at room temperature.

Turn each candy piece over and dry for another 12 hours or so

I prefer transporting them in a plastic bowl, in layers separated by wax paper. If they get too warm they may stick together, so keep them in a cool place.
